Project: HACCP Program – Fermented Ready-to-Eat Meats

This new fermented and ready-to-eat meat production facility was attempting to get their regulatory compliance program (Canadian Food Inspection Agency Food Safety Enhancement Program) approved by CFIA so that they could proceed with a final inspection to obtain registration and licensing but they were struggling with the program. Mallot Creek was hired to take over the process and completed the written programs, obtained approval, and participated in the final inspection. Ultimately, CFIA registration and licensing was obtained.
