Our Story
In 1999, founders Bruce Cowper and Tito Guglielmi created Mallot Creek Group to provide the food and beverage industry with a resource that was like no other.
From their own extensive experience, they saw an unfulfilled need with regards to industry development and growth. As an engineer for a major food company, Tito engaged many consultants that barely understood the intricacies of the food industry and so then had to rectify and resurrect many projects to address operational realities. Bruce, coming from a strategic business and marketing background saw many of the mistakes that companies were making; both with their physical facility growth strategies and their business development strategies.
Bruce and Tito set out to start a new norm in consulting for the food industry. They quickly began to make a name for themselves as they had the experience, expertise and network to provide their clients with answers to their problems. The partners provided real workable and executable recommendations that positively influenced their clients’ businesses.
Growth was soon to follow. Recognizing that it doesn’t matter how state of the art your facility is, or how masterfully your business is operating without safe food, no business can be profitable. This was one of the first services they added to their eclectic mix of capabilities. Soon after they saw the need to hire qualified and capable people who understand the food industry beyond just footprints and SWOT analysis. They began to seek out and acquire some of the best engineers, business and marketing minds that had practical experience and qualification to quickly adapt and adjust to the ever present challenges of the food industry.
Today Mallot Creek continues to grow by supporting increasingly complex and larger scale projects for the industry. However, we have never forgotten what has built our business; our valued, long standing relationships with new regionally based start-ups, provincial and national players, and the many sectors in the agri-food industry.

BRUCE COWPER

Prior to starting Mallot Creek, Bruce held various positions with leading food processing firms in the Canadian food industry. This real world experience has allowed Bruce to effectively manage food processing facilities, prospering from his understanding of the food industry, particularly product formulation, product development, marketing, financial analysis and business strategy. His unique skill set led to establishing Mallot Creek Group Inc. with fellow partner and engineer Tito Guglielmi in 1999.
Bruce has conducted feasibility studies, strategic business analysis and business plan development for small, medium and large food-based companies in North America and internationally. He has taken his understanding of the strategic process and assisted many food processors in assessing the operational realities and intricacies of running food operations and identified achievable scenarios and solutions to meet their unique business situations.

With almost three decades in the Food and Beverage industry, Tito possesses substantial industrial food processing design experience and a realistic approach to investments. He is well versed in design, construction, and project management of controlled-environment manufacturing, storage and distribution facilities.
Tito is also fully conversant with regulatory and certification requirements for food manufacturing facilities, HACCP principles and design for HACCP compliance. Prior to co-founding Mallot Creek Group, Tito was the Senior Engineering Executive for a leading national food manufacturing and marketing company in Canada.

Our Location
Mallot Creek’s office can be found in the beautiful town of Elora, Ontario. This historical community is situated on the Grand River and located approximately 20 kilometres north of Guelph. Ranking 3rd Canadian Millennial Hot Spot in 2018, Mallot Creek is 30 minutes northeast of Kitchener-Waterloo and 90 minutes west of Toronto. An easy commute and a wonderful place to live, especially for growing families, Elora has trendy shops, restaurants and amenities to offer the community.
While small in size, Elora has many well-known attractions which bring visitors from all over the world. It is best known for its close proximity to the Elora Gorge and Quarry, with many visitors coming to view the breathtaking limestone cliffs.

Our company has ‘grown up’ in the food industry so we actually have experienced and understand the many challenges of this environment. We have a wide breadth of services and internal skill sets so it isn’t often that we cannot help. However, when those times arise that we may not be the best fit, we are up front about this and can often tap into our vast network of industry support.
